Jam is a preserved product made by cooking crushed fruit and mixing it with sugar. Bananas have a high nutritional content. Currently, the community's need for bananas has increased drastically so that bananas are sought after for consumption. Processed from bananas that have a high fruit value is jam processing. The main problem is "How is product innovation in the Mimu banana jam business". This study aims to determine product innovation in Mimu Banana Jam. This research is an experimental research type with descriptive type. The results of the Mimu banana jam business research show that 3 innovation bases have been implemented, namely modulation-based innovation using sucrose as a sweetener, size-based innovation using sizes of 150 ml, 200 ml, 300 ml, and packaging-based innovation using practical and well-sealed packaging so that can guarantee the resistance to mas banana jam.
